This week I want to share a simple veggie pasta salad recipe I’ve been using ever since I got hooked on eating vegetable pasta salad. I kid you not, the only thing you need to cook is the pasta! It’s up to you if you want to sauté or steam your vegetables first before you mix them in. This is a great recipe if you want to have something healthy for dinner and something quick to prepare.

Simple Vegetable Pasta Salad Recipe with Vinaigrette Dressing

Depending on how much you want to serve, you can start with 250g to 500g of spiral pasta or whatever pasta you want.

For the dressing:

1/4 cup of olive oil
1/4 cup of white vinegar
1 1/2 teaspoon of garlic powder
1 1/2 teaspoon of salt
1 teaspoon black ground pepper
1 teaspoon of Italian seasoning
1 teaspoon of sugar
1/2 teaspoon of onion powder
1/4 teaspoon of basil

Just combine all ingredients above in a big bowl then toss in your cooked and cooled down pasta. For my past few veggie pasta salad, I haven’t put in onion powder and it didn’t make it taste any different. You can also add in 1/4 teaspoon of dill if you wish.

You can basically put any kind of vegetable in it. Our usual consist of red and green bell peppers, sweet corn kernels, cucumber, and carrots. Pretty simple! But it tastes so good! Enjoy!
